breakfast muffins......

brown sugar & sour cream muffins...... simplified

in one bowl mix together.......
3 cups all purpose flour
1/2 teaspoon cinnamon
1 teaspoon salt
1&1/2 teaspoon baking soda
set aside......

in another bowl mix together......
1 cup brown sugar
3/4 cup + 2 tablespoons canola oil
3/4 cup sour cream
2 eggs
1 teaspoon vanilla extract
1/2 cup shredded carrots
1/3 cup raisins
1/4 roasted sunflower seeds

add dry ingredients to wet, little at a time and mix together.......bake in lined or baking sprayed muffin tins at 400' for 20 to 25 minutes.......let cool and serve with butter, delicious......

OH, boy Cheri....this recipe makes enough to allow freezing a few. That's if there are any leftovers.
