pumpkin pound cake....



yesterday was baking day, thought i would give this pumpkin pound cake a try.....very simple recipe the hardest part was finding the canned pumpkin, bought several love pumpkin desserts....
in a large bowl mix 2-1/2 cups sugar & 1 cup oil
add 3 eggs, beating well after each one
combine 3 cups flour, 2 tsps baking soda, 1 tsps each cinnamon & nutmeg, 1/2tsps salt, 1/4 tsps ground cloves
add this to sugar mixture alternating with a 15oz can of solid-pack pumpkin
pour into a well-greased tube pan
bake at 350' for 1 hr., mine needed about 5 extra minutes
cool, remove from pan & dust with powdered sugar
love the spice aroma now filling my home, very autumn....
enjoy your slice of cake....

That sounds delicious. I often make pumpkin bread...and I make pund cake...but not the two together! I will have to try that! Thanks!!

You reminded me that canned pumpkin was hard to come by last year in the grocery stores. Wonder why. While on vacation last week, I ordered a turkey dinner at a restaurant. A wonderful dinner. It came with a dessert called Indian Pudding. It was sort of a creamy spiced pumpkin pudding. Yummy. It was served warm with a dab of vanilla ice-cream and whipped cream.

Oh...that looks all kinds of delish. I'm going to have stop reading your blog on an empty stomach....Really - canned pumpkin is hard to find? Guess I haven't had a problem....but don't get me worried....I'd go through withdrawals. Gonna have to stock up on a few cans I guess! TFS! Smiles & Hugs ~ Robin
